Easy Gourmet Gluten-Free Cooking March 18, 2010

I love to cook, but let’s make one thing clear, I am no Julia Child. My take on cooking is that it should be easy to make but look like it was hard to cook (and taste phenomenal, of course!). I like my food to look, feel, and taste glamorous with minimal work. 🙂

So, here is a recipe my mom stumbled upon a few months ago which is ultra-fabulous and gluten-free. Give it a whirl the next time you’re having guests over or want to surprise your hunny with a romantic dinner:

  • 4 boneless skinless chicken breasts
  • 4 Tablespoon butter
  • ½ cup white wine or chicken broth
  • ½ cup heavy whipping cream
  • 1 Tablespoon minced rosemary
  • 2 pressed garlic cloves
  • 1 package of sliced mushrooms — I used half pack of white button mushrooms and half pack of baby brown portabella mushrooms

 

Cooking gluten free

NOTE: Use organic ingredients for the freshest, best-tasting version of this dish!

-In large skillet cook chicken 1 tablespoon butter and garlic. Cook chicken until juices run clear. Remove and keep warm.

-Add wine to pan and cook stirring to loosen browned bits from pan add mushrooms and cook , add cream and bring to boil. Reduce heat cook and stir till thickens, stir in rosemary and extra butter, put chicken in to warm it up a bit.

-Serve with rice and your favorite veggies lightly drizzled with olive oil, sea salt, & pepper!

Just Say No to Zits March 17, 2010

Burt Bees Herbal Blemish Stick One of the awesome things about going gluten-free is that my skin significantly cleared up.

As a teen, I actually went on Acutane THREE TIMES because my acne was so severe. For those that don’t know, Acutane is the very last option when NOTHING else has worked, most hardcore prescription medicine out there for acne. You actually are forced to take pregnancy tests every few weeks while your taking it because it can cause massive birth defects and retardation. Acutane is so crazy, it has even been linked to depression and even a few suicides! I never got depressed on Acutane, but it did give me massive headaches and make my bones weak, gave me super-weird dreams, and made my eyes, lips, and skin ridiculously (and painfully) dry while I was taking it. It was brutal.

The funny thing is that even after going through this medicine three times (once is usually more than enough for even the most severe patients), my acne would still flare up really bad at least once a month. My skin was still super-oily, but dry and flaky if I used harsh topical treatments on it. My skin was a nightmare.

But, I kid you not, as soon as I started eating gluten-free, my acne problems went completely out the window. It was unbelievable! All this time, I probably didn’t need to take any medicines at all… I just needed to adjust my diet! And not the typical advice of staying away from chocolate or french fries! I eat both of those things all the time and enjoy a great complexion! 🙂 I wish I would have known to eat gluten-free a lot earlier, but oh well, I am just so happy that I know now!

So even though my skin does well most the time, now I get the occasional, normal zit. It’s no big deal anymore and nothing like the kind of acne I used to have, but I still would prefer to have no zits rather than a few zits. So, what do I do? I like Burt Bee’s Herbal Blemish Stick. It makes me happy that for all the hardcore medicine I’ve had to take for acne, that I have found an all-natural approach to getting rid of pimples (going gluten-free and using acne-fighting products with all-natural ingredients).

It costs $8.50 for a .26 oz stick and you can find it at many grocery stores in the all-natural product section. You can also buy it directly from Burt Bees. The smell is pretty strong, but if you just dab it onto bumps or blemishes at night or in the morning, it’s not too bad. MARIPOSA: Heavenly Gluten-Free Brownies March 11, 2010

Mariposa's Gluten Free Brownies and Elegant Packaging I was kind of having a “blah” day yesterday when I heard a knock on my front door. Waiting on my doorstep was a package. It always cheers me up whenever I get a package, but a package filled with 1/2 dozen gluten-free Mariposa brownies? …Pure bliss!!!

Let me tell you a little bit about Mariposa: They are a gluten-free bakery in Oakland, CA (that ships their fantastic treats anywhere in the US) dedicated to making artisan-crafted, gluten-free goodies.

First of all, their brownies are HEAVENLY. I got the 1/2 dozen brownie set– filled with two Triple Chocolate Brownies, two Mocha Chocolate Brownies, and two Walnut Chocolate Brownies ($21.50 at Mariposa). And WOW!! They’re flaky on the outside and soft/chewy/fudgy on the inside… just like a brownie should be. All three brownie flavors are rich, delicious, and ridiculously chocolate-y. I think I like the Mocha brownie best, but all three are so good, I’m seriously conflicted.

I also think that I am full-on addicted now. Only a day later, I am running scarily low on my 1/2 dozen brownie set… If I could, I would inject these brownies straight into my vein. 🙂

These brownies are so incredible it’s hard to believe that they are gluten-free. If it didn’t say “GLUTEN-FREE/ WHEAT-FREE” all over the packaging, I would have sworn I just got contaminated.

Oh, and I am NOT lying, but I literally had dreams about eating more of their brownies after I had fallen asleep last night. So, yeah, I pretty much had another brownie for breakfast this morning. It was awesome.

Second of all, their packaging and presentation is fabulous. Often times, gluten-free products’ packaging looks so… how do I say this? …Cheesy? Bad Day? Indulge Yourself with Gluten-Free Spa-Treats March 10, 2010

Gluten-Free Pretzels- that Don’t Taste GF (in a Good Way) March 9, 2010

Glutino Gluten-Free Pretzels I was shopping at the mall the other day when I looked over and saw two toddlers at the check out right in front of me. One of them was sitting in his stroller, the other was out and about, hanging on the stroller handles and trying to stand on it’s wheels. Both of them were munching-away on pretzels filled in the stroller’s dashboard. Pretty standard.

Then the toddler that was out of the stroller busted out the entire bag of pretzels and decided to eat from his own stash. And that’s when I saw it: GLUTEN-FREE PRETZELS in large print on the pretzel bag.

Now, if kids are eating it, it must be good. Young kids don’t have “emotional attachments” to food like we adult foodies do, so if the food doesn’t taste good, they’re not gonna eat it. It’s as simple as that.

So, the next time I went to the grocery store, I was excited when I saw the same brand of gluten-free pretzels on the shelf: Glutino Gluten-Free Pretzels. I bought a pack and decided to give it a try- and they’re great! Honestly, they taste JUST like regular, gluten-FILLED pretzels… which is rare! Any time that you can’t tell if a food product is GF, that’s pretty much always a good thing.

If you want some yummy pretzels to snack on in between meals or along with lunch, try Glutino’s brand! They would also make a great snack-choice to bring along to BBQ’s or neighborhood get-together’s… that way you have something GF (that tastes good) to munch on while you socialize!

I like the 8 oz. pretzel sticks and pretzel twists. They cost about $5.00 and if you can’t find them at your local grocery store, you can buy them directly from Glutenfree.com or Amazon.com (which you can buy 12 packs at a time from Amazon! Obviously more expensive than buying just one bag, but if you like them as much as I do, and have kids/husbands/friends that will want to share- then you may want to get some spare bags).

I haven’t tried any other products from Glutino (though I probably will try some more of their stuff since their pretzels are so good!), so I’m not sure if any of their other snacks/baking products/etc are quite as yummy, but just know that you’ll definitely be happy with their pretzels!

And although clothing is not something us gluten-free gals typically worry about, we found a brand that looked so amazing, we seriously considered nibbling on some on some of their stuff (hey, it’s organic, right?!! 🙂 ): Fashion-Conscience.com

Really cute but totally wearable grey slip on heels with subtle heart stitching. Will look great with skinny black or grey jeans now and black opaques for later in the year. Great work and weekend shoe.

Get Ready for Spring with Glazed Gluten-Free Lemon Cupcakes and Lemonade! March 5, 2010

I am sooooooooooo ready for Spring. Here in NashVegas 🙂 the sun is starting to peer out from underneath the clouds and show it’s pretty face again, but it still too cold for my taste.

Meanwhile, all this cold weather is making me fantasize about cute, designer white jeans, a tall pair of fabulous wedge sandals, super-flowy spring tops, and  drenching my body in coconut-infused lotions and body sprays. Mmmm… Spring sounds so good, doesn’t it?

You know what else sounds good? Lemon-inspired treats! Lemons are bright in color and anything with lemon tastes so yummy and refreshing! Lemon is the perfect flavor to get in the mood for a fantastic spring 2010!

Why not host a little get-together with your favorite gals this March and snack on some delicious gluten-free lemon cupcakes and lemonade! Try these recipes:

Yummy Gluten-Free Lemon Cupcakes Glazed Lemon Cupcakes
Ingredients
1 1/2 cups Bob’s Red Mill GF All Purpose Flour
3/4 teaspoon xanthan gum
2 teaspoons baking powder
1/2 teaspoon salt
zest & juice of 1 lemon (reserve 1-2 tablespoons for glaze)
8 tablespoons (1 stick) unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup sour cream (low-fat is fine, just don’t go non-fat)
1 – 1 1/2 cups confectioner’s sugar

1. Preheat oven to 350 degrees.  Grease a standard 12-muffin tin & set aside.

2. In a small bowl, combine dry ingredients (flour, xanthan gum, baking powder, & salt).  Set aside.

3. In a large bowl, combine butter & sugar until well combined.  Add eggs, one at a time blending after each addition, then vanilla.  Add zest and juice (except for final 1-2 tablespoons of juice) & blend.  Alternate adding the dry ingredients & sour cream to the mix, beginning & ending with the dry ingredients, and mix until just combined.

4. Divide mixture evenly among the muffin cups & bake in the center of a 350 degree oven for about 25 minutes, until a toothpick inserted into the center comes out clean.  Cool completely.

5. While the cupcakes are cooling, make the glaze.  Combine the confectioner’s sugar and the reserved lemon juice until smooth, adjusting the amount of confectioner’s sugar to the desired consistency.  If you add too much sugar, just add a few drops of water to thin the glaze.  Pour the glaze over the cakes while they are on a wire rack.  Allow to set (chill glazed cupcakes in the refrigerator to set if your environment is humid). I also like to add more zest on top of the cupcakes’ glaze!

Fresh Lemonade

Juice of 10 lemons

5 cups water

1 cup sugar

fresh mint – tear into small pieces or put in a chopper/blender so flavor can come out more

Stir together, chill, and enjoy!  🙂

*can pour over ice if desired

*may want to double recipe if wanting a pitcher full

For an adult-gathering with the gal pals, pour your friends one tall regular glass of lemonade and then add 2 shots of the vodka or 1/5 cup of rum for a “hard” lemonade! Or add a touch of Sprite or fizzy water to make a lemon-inspired Mojito!

…Yummy lemon-y goodness.
